Vegan Tuna Poke Bowl

This is my I can’t believe this is not tuna recipe! And I’m not gonna lie I wasn’t convinced as I was making this recipe I was a bit sceptical about the whole thing! But let me tell you I am hooked on this!

Make sure you prepare this with time because the longer the watermelon sits on the marinade the better the flavour.

I made a big batch of it to try and make sushi and it works wonderfully! so if you are a sushi lover like me make sure you sabe some and try that out!

Vegan Tuna Poke Bowl

Serves: 3-4

Prep Time: 15 min (plus marinate time)

Cooking time: 45 min


  • 2-3 cups watermelon cubes

  • Cooked Basmati Rice

  • 1/2 Cucumber, sliced

  • 1/2 cup mango or pineapple cubes

  • 1 sliced avocado

  • 2-4 tbsp spicy mayo (optional)

  • 1 scallion, sliced

  • 1 1/3 cup shredded cabbage


  • Juice from 1/2 Lemon

  • 1 Inch Cube of Ginger grated or minced

  • 2 Tbs Toasted Sesame Oil

  • 1/4 Cup Tamari or Soy Sauce

  • 1/2 Tbs Sesame Seeds

  • 2 Tbs Scallions chopped

  • 1/2 - 1 Tbsp Siracha

  • 1 Nori Sheet ( optional)


  1. Set a pan to medium heat, toast nori sheet for 1-3 minutes or until is crunchy.

  2. Once crunchy, crush it using your hands and add it into a bowl or container with the rest of the marinate ingredients and mix until well combined.

  3. Add the watermelon cubes into your bowl and toss around until every piece is covered.

  4. Marinate watermelon for 1-4 hours or over night. (The longer you marinate the better the flavour)

  5. Once its marinated preheat oven en 350°F/180°C.

  6. Remove the watermelon from the marinade and add into a baking tray. Pour in half of the marinade and cook for 45 minute.

  7. Once cooked remove from oven, add rest of the marinade and cool in the fridge for 1 hour.

  8. Assemble your poke bowl by adding rice, watermelon tuna, sliced avocado, chopped cucumbers, mango or pineapple cubes, scallions and spicy mayo.
