Tofu Scramble Toast

High protein 5 minute breakfast made with only 5 simple ingredients, Tofu, onion, olive oil, garlic, salt and parsley. Put it on top of toasted bread topped with some grilled veggies and you have a balanced, filling healthy breakfast!

This is one of my favourite vegan breakfasts because is packed with protein, its easy and quick to make and its a savoury option!


Tofu Scramble Toast


Serves: 2

Prep Time: 5 min

Cooking time: 5 min


Ingredients


  • 1 tsp turmeric

  • 1/2 tsp salt

  • 1/2 onion, chopped or ( or 3 spring onions)

  • 6 ounce / 300 gr of Firm Tofu

  • 1 garlic clove, minced

  • 1 Tsbp olive oil

  • Pepper to taste

  • Toast and cherry tomatoes to top ( optional)

Method

  1. Bring a skillet to medium heat grill cherry tomatoes tender and cooked And remove from skillet and place aside.

  2. Drain tofu and pat dry with a kitchen or paper towel.

  3. Add to tofu, chopped garlic, onion, olive oil, turmeric, salt and pepper to a bowl and smash with a fork. Cook on a pan on medium heat for 3-5 min.

  4. Add tofu scramble on top of toast and top with grilled tomatoes or any other veggies of your choice.
