If you aren’t ready for the new week yet, this tofu scramble is here for you!This silken tofu with turmeric, pepper, grilled cherry tomatoes, kale and sliced avo is the perfect Monday motivation meal!

1 cup cherry tomatoes
1 handful kale
1 tsp turmeric
4 onz silken tofu
Bring a skillet to medium heat grill cherry tomatoes with kale and 1/2 tsbp olive oil and grill until all is tender and cooked And remove from skillet and place aside.
Drain tofu and pat dry with a kitchen or paper towel.
Add to skillet and smash with a fork. Add turmeric pepper and salt and mix until turmeric covered all tofu. Cook for 3-5 min.
Add veggie mix, combine with a spatula and and serve!
