Savoury Breakfast Waffles

Theres something about Sunday mornings that just make me crave waffles! But this time I was craving something savoury so I came up with this savoury and spicy sweet potato waffles! Trust me they are as good as they look. ⁣This recipe makes the perfect addition to your Sunday brunch.




Serves: 6

Prep Time: 15 min

Cooking time: 20 min

Ingredients

  • 1 sweet potato (cooked and mashed)⁣

  • 1/4 cup rice flour (or any flour of your choice)⁣

  • 1/2 tsp cumin⁣

  • 1/2 tsp onion powder⁣

  • 1/2 tsp paprika⁣

  • 1/2 tsp turmeric⁣

  • 1/2 tsp thyme⁣

  • 1/2 tsp salt⁣

  • 1/4 cup unsweetened coconut milk ( or any plant based milk)

  • Pepper to taste⁣

  • 1 flax "egg" (1 tbsp flax seeds & 3 tbsp water , mix and let sit 10 min)⁣ handful of spinach, chopped (optional)⁣

Method

  1. Mix dry ingredients in a bowl, slowly incorporate mashed sweet potato, coconut milk and flax "egg". Mix well and add chopped spinach.

  2. Heat your waffle makes add batter and cook 4-5 min each side.

  3. Enjoy!⁣
