Theres something about Sunday mornings that just make me crave waffles! But this time I was craving something savoury so I came up with this savoury and spicy sweet potato waffles! Trust me they are as good as they look. This recipe makes the perfect addition to your Sunday brunch.
Prep Time: 15 min
Cooking time: 20 min
1 sweet potato (cooked and mashed)
1/4 cup rice flour (or any flour of your choice)
1/2 tsp cumin
1/2 tsp onion powder
1/2 tsp paprika
1/2 tsp turmeric
1/2 tsp thyme
1/2 tsp salt
1/4 cup unsweetened coconut milk ( or any plant based milk)
Pepper to taste
1 flax "egg" (1 tbsp flax seeds & 3 tbsp water , mix and let sit 10 min) handful of spinach, chopped (optional)
Mix dry ingredients in a bowl, slowly incorporate mashed sweet potato, coconut milk and flax "egg". Mix well and add chopped spinach.
Heat your waffle makes add batter and cook 4-5 min each side.
