Peanut Butter & Choc Energy Balls

No-bake chocolate peanut butter energy balls made with just 6 wholesome ingredients – the perfect pick me up! Vegan and gluten-free. and ohhh so sweet!

These energy balls are nutty, chewy and packed with all the good stuff, they are a bite-sized burst of energy making it the perfect go to snack . Plus they’ve got chocolate AND peanut butter so you can’t go wrong with these! #success

They are sweet, chewy and my go to healthy no bake sweet. I usually make them every Sunday and keep them in a sealed container for up to 10 days for when the sweet craving quick in.

Peanut Butter & Choc Energy Balls


Serves: 10-12

Prep Time: 15 min

Ingredients


  • 1 Cup Nuts ( almonds, cashews, macadamia pecans or walnuts)

  • 8-10 Medijool Dates

  • 2 Tbsp Smooth Peanut Butter

  • 1 Tbsp Coconut oil, melted

  • 2 Tbsp Cacao powder

  • 1 tsp Vanilla extract

  • Pinch of salt


Method


  1. Soak dates 10 min in hot water.

  2. Add nuts, pinch of salt and cacao to food processor and blend until you get a finely “flour” consistency & transfer to a bowl.

  3. Once dates are soaked remove seeds add to a food processor with the melted coconut oil, vanilla extract, and peanut butter and blend until a smooth paste is formed.

  4. Add date mixture, crushed nuts and mix until you get a dry dough.

  5. Roll into 10-12 balls and place in refrigerator for 30min to firm up.
