Are you a Mexican food lover? I got you! This low carb naked burrito is the healthyfied version of that chipotle burrito bowl we all love! You can add other topping like guacamole or tortilla chips if you are feeling extra fancy!
Naked Burrito Bowl

1 Medium Head of Cauliflower
1/2 Pinto Beans
1 Beef Tomato
1/2 White Onion
1/2 Cup Sweet Corn
1/2 Cup chopped parsley
1 Lemon, Juiced
1 Cup Bbq Quinoa Meat ( Find recipe here)
1/3 Cup Vegan Cheese Sauce ( Find recipe here)
Jalapeños ( Optional)
Wash and drain cauliflower, using a grater grate the cauliflower head to make the cauliflower rice.
Chop Tomato, onion and parsley. Add to a bowl squeeze lemon juice on top and add salt to taste.
Assemble bowl by adding the following to each bowl: 1/2 of the cauliflower rice to each, 1/4 cup of sweet corn, 1/4 Cup pinto beans, 1/2 Cup bbq quinoa meat, 3 Tbsp of cheese sauce, jalapeños and extra lime.
