Who doesn’t love a a good pancake stack on a cold and grey day? As the weather start getting colder I start craving warm breakfasts that will keep me full for long time! This Maca protein pancakes are a quick and easy breakfast to make when you fell like having a a warm and fluffy meal. Maca is great to increase stamina and athletic endurance its also a powerful antioxidant that helps the growth and renewable of skin cells increases your memory, mood and energy.
I always like adding protein powder to pancakes to give them and extra boost, this gives me more energy and keep me full for longer. Adding protein to your recipes should be a very simple thing, thats why I love Nutristrength Unflavoured Pea Protein Powder so much. I can easily add protein when baking or cooking with out altering the flavour of my recipes.

Serves: 8 pancakes
Prep time: 5 min
Cooking time: 10 min
2 Scoops of protein powder ( I used Nutristrength Unflavoured Pea Protein Powder)
1 cup Gluten free flour
1 tbsp Melted coconut oil
2 tbsp Maple syrup
1 tbsp apple cider vinegar
1 tbsp Baking powder
2-3 tbsp Maca Powder
1 tsp Vanilla extract
Pinch of salt
Mix all ingredients in a bowl or blender.
Heat a skillet to medium heat and when it is hot enough bring skillet to low heat. Add cooking spray or any oil of preference and heat for 1 min.
Grab a 1/4 Cup and use this to measure the amount of batter you will use for each pancake.
Once the pancake starts bubbling flip and cook the other side for 1 -2 min.
Serve with maple syrup, jam, bee pollen , coconut flakes or any other topping of your choice.
