We all have days where all we want to do is order pizza and call it a night right? But don’t worry I gotcha. This go-to weeknight recipe is packed with flavour and heat and with only 8 ingredients and 15 min you can have a warm and cozy bowl made with only good to you ingredients. And do you know it is also packed with probiotics? Yes probiotics, in this recipe kimchi is the star!
try to do this recipe with rice that is at least one day old for more flavour! I love pairing it with fried tofu and mushrooms for extra flavour.

Kimchi Fried Rice Bowl
Prep Time: 5 min
Cook Time: 10 min
200gr Firm tofu, cubed
1 Cup Kimchi ( Make your own here )
1/2 Cup cooked rice ( one day old rice works best)
1 Tbsp Soy sauce
2 Tbsp Sesame seed oil
1 Tbsp Gochujang sauce, optional ( Buy in your local Asian shops)
3 Scallions, chopped white and greens separated.
1 Cup Chopped or sliced mushrooms
Bring a large pan or wok to high heat. Drizzle a bit on oil and add the white part of the scallions and cook for 3-5 min.
Add in the Kimchi and gochujang sauce and fry for 1 min.
Bring the heat to a medium. Add in rice, tofu and mushrooms and fry until everything is cooked and rice has absorbed all the flavours.
Add half of the green scallion pieces, add sesame seed oil and mix and fry for 1 more min.
Top with the rest of the scallions and sesame seeds(optional).
