Green Pea Hummus

Changing my weekly chickpea hummus for this oil free pea hummus with a touch of mint. It’s so refreshing and such a great dip for spring and will take you no longer than 5 min to prepare! I topped it with coconut yogurt, crunchy chickpeas, pepper flakes and fresh mint leaves. Find the recipe for my crunchy curry chickpeas in my highlights! #thefitstitch


Serves: 2-3 Cups

Prep Time: 10 min


Ingredients

  • 1 tin of (400 g) drained green peas

  • 1 tin (400g ) drained butter beans

  • 2 tbsp tahini

  • 1 garlic clove

  • 1 tsp dry mint

  • 1 handful of fresh spinach

  • Juice of 1 lime

  • 2-3 tbsp water

  • Salt and pepper to taste .⁣


Method

  1. Blend everything in a food processor until creamy and smooth. For smoother consistency add a splash of water.
