Snack attack! One of my biggest weakness when trying to eat healthy are snacks but these curry chickpea poppers do the trick. They are very filling and add some extra grams of protein to my day, you can add them to salads and bowls to add that extra crunch.
Serves: 2 Cups

Cooking time: 45-50 min
1 15 ounce can chickpeas (drained and dried) 1 Tbsp coconut oil 1/2 tsp sea salt 1 tsp curry powder
Preheat oven to 350 F / 176 C.
Mix ingredients in a bowl, lay on a baking sheet and cook for 45-50 min tossing them every 15 min. Cool down completely, they will continue crisping as they cool down. Store on a sealed container or jar.
I like keeping mine in the fridge to keep the crunchiness for longer!
