Buffalo Tofu Fingers

350 grams Extra Firm Tofu
1/3 Cup buckwheat flour ( or any flour of your choice)
2/3 Cup Unsweetened plant milk
2 Tbsp Cornstarch
1 Cup Gluten Free Panko Crumbs ( bread crumbs)
1 tsp garlic powder
1 tsp salt
1 tsp paprika
1 tbsp vegan butter substitute; melted
1/2 cup Red Hot sauce
Preheat oven to 425ºF and cover a baking sheet with baking paper.
Remove tofu from packaged and drain water. Place tofu between kitchen towel and place a plate/small chopping board on top to drain excess water, leave draining for 20 min.
Add flour, cornstarch, garlic powder, salt and paprika and milk in a bowl and mix with a whisk until well combined. Grab a flat place and place panko in the plate and spread over the plate.
Cut tofu into strips dividing the tofu block so you get 10-12 strips
Dip tofu strips in batter until coated evenly, then transfer to panko crumbs plate and roll until its completely covered by panko. Then transfer to your baking sheet. Repeat with all tofu strips placing them one next to each other with out touching each other.
Bake for 15 min, then flip strips with a spatula and bake for another 10 min.
Whisk together red Hot sauce and vegan butter in a small bowl. When the tofu strips finish baking take a plastic pastry brush and evenly brush each piece with the hot sauce mixture and bake for another 7 min until the sauce is absorbed.
Remove from oven and brush again with the remaining buffalo sauce. Let cool off for 5 min so they crisp up! Serve with vegan ranch sauce and scallions! Enjoy
